Cajun Shrimp Alfredo

Ingredients

For alfredo sauce

  • ¼ cup butter 1 stick
  • ¼ cup all purpose flour
  • 2 ½ cups heavy cream
  • 2 garlic cloves minced
  • 1 cup parmesan freshly grated
  • salt and pepper to taste

For shrimp

  • 1 garlic clove minced
  • 1 tsp salt
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • 1 tbsp lemon juice fresh is preferred
  • 2 tbsp olive oil
  • black pepper coarse ground

For serving

  • fettucine noodles cooked to al dente
  • parsley fresh, chopped

Instructions

For shrimp

  1. Preheat the broiler and position the rack close to the heat source.
  2. Mince a garlic clove with salt to form a paste, then mix in cayenne, paprika, lemon juice, olive oil, and a generous amount of black pepper. Toss the shrimp in this Cajun paste, ensuring they’re evenly coated.
  3. Lay the shrimp on a sheet pan and broil for 2 minutes, then flip and broil for another 2 minutes. They should develop a beautiful char and be cooked through.

For alfredo sauce

  1. While the shrimp cooks, melt the butter in a saucepan over medium heat. Whisk in flour until smooth and allow to cook for about 2 minutes to cook off the flour taste. You're making a roux as the base for your sauce.
  2. Stir in heavy cream and minced garlic, cooking gently to combine. Season the sauce with salt and black pepper to taste, then lower the heat. Stir continuously until the sauce thickens.
  3. Turn off the heat and stir in parmesan. Add salt and pepper to taste.
